Magic Molly is known for its deep purple color and dark, nearly black skins. Baked, boiled, or roasted, it's an exceptional all-purpose potato; but roasting will bring out its delectably earthy undertones. The texture is more waxy than mealy, and the flesh retains a deep purple hue even when boiled.
